Of all the sparkling wines from the Summerhill Pyramid Winery in Kelowna, this is one of the most creative and one of the best. The trick here is that a dash of icewine is used for the dosage rather than a sugar solution. This technique gives a turbo boost to the flavours.
Because the wine is packaged in clear bottles, the brilliant rosé hue makes the wine a show stopper even before the cork is popped, and more so when bubbling in Champagne flutes. On the palate, there are delicious strawberry and raspberry flavours that linger on the finish. The wine has a satisfying rich feel in the mouth.
The use of icewine for the dosage might raise a red flag among those who find icewine too sweet. This wine, however, is superbly balanced so that it finishes with just a kiss of sweetness. This is a wine that can be enjoyed before dinner, after dinner, with food and anytime that calls for celebration. An added virtue: the wine is organically grown and produced.
